Taste & texture

A tightly closed, moist crumb — dense but not gummy — that slices clean after a full 24-hour rest. The short scald delivers moderate sweetness with a faint apple-like note that Stanley Ginsberg attributes specifically to red malt in the scald; the sourdough opara pulls in the other direction with a mild lactic tang. The crust is firm and dark, coloured by melanoidins from the fermented malt. Aroma is earthy and malty with a chocolaty undertone. The bread keeps well for three to four days, gaining flavour as the crumb sets.

Good to know

Why a scald in R1-C4 if there is none in R1-C1, R1-C2, and R1-C3?

The scald saccharifies part of the rye flour and brings out the sweetness; together with red malt it creates a recognizable scald rye profile. R1-C4 tests exactly how the scald works before adding molasses, sugar, and caraway in R2-C1 (Borodinsky).

Can I hold the scald at 65 °C for 3 hours as in Borodinsky?

Yes, but that is already R2-C1 technology: at 65 °C amylase is active and the scald saccharifies more. R1-C4 is simpler without thermostatting: boiling water in a thermos for 1 hour gives less sweetness but a more reproducible result for home conditions.

Can it be made without coriander?

Yes, coriander is optional. Without it the bread loses one flavor note, but the pair 'scald + malt + opara' remains the main lesson topic.

Why only 20% wheat flour?

20% of wheat flour gives a minimal wheat scaffold and slightly lightens the crumb, but does not turn the bread into a 60/40 rye-wheat. This lets you compare R1-C4 with R1-C3 (100% rye) and see what is changed by the scald and what by the wheat flour.

This is a rye-wheat 80/20 bread built on a scald and red fermented malt. The scald saccharifies part of the rye flour and brings out its natural sweetness, which then contrasts with the acidity of the sourdough opara to give a characteristic dark, scalded-rye profile — all without molasses, sugar, or caraway. It is the technical bridge between a plain 100% rye and a full Borodinsky.

How It Is Baked Around the World and Why

Scalded rye is the signature of the Northern and Eastern European baking belt — Russia, Latvia, Lithuania, Estonia, Finland, and parts of Germany — wherever rye grew better than wheat and bakers had to coax flavor and keeping quality out of a flour that has almost no gluten. The shared idea is simple: pour boiling water over part of the rye flour (a zavarka, German Brühstück) to gelatinize the starch and let amylase nibble it into sugar before the dough is ever mixed.

Why bakers do it. Rye starch gelatinizes at a lower temperature than wheat and is hungry for water; a scald binds that water into a gel, so the crumb stays moist and slices clean for days instead of drying out. The released sugars feed a slow, deep Maillard browning and give that faintly sweet, malty note people recognize as “dark rye.” Latvian rupjmaize and Lithuanian ruginė push the scald hard — long, warm saccharification near 63–65 °C for pronounced sweetness — while a simple Russian household scald like this one is short and mild. German Vollkornbrot leans on the same Brühstück for moisture but often skips the malt. Red fermented malt, used here, is the Russian fingerprint: it is the same ingredient that later defines Borodinsky, just used in a smaller, quieter dose.

Scald Theory

When rye flour and malt are poured with boiling water, two things happen:

  1. Starch gelatinization. Cold starch does not release water; hot rye starch in water forms a thick gel that holds moisture and makes the crumb juicier.
  2. Partial hydrolysis of starch to sugars. Amylase from rye malt (especially white fermented malt) breaks part of the starch into maltose and glucose. Red fermented malt has less enzymatic activity than white but gives more color and aroma.

This bread uses a short scald (1 hour in a thermos), without thermostatting at 65 °C. This gives moderate sweetness, clear dark color, and simplifies the home process.

Why Cool The Scald To 35–40 °C

If a hot scald (above 45 °C) ends up in the mix, the acidity of the opara drops, and lactic acid bacteria suffer thermal shock. The dough becomes sluggish, the yeast slows down, and the flavor shifts toward bland and sweetish.

On the other hand, a scald that is too cold (below 25 °C) overcools the dough; fermentation slows and the proof drags on. The optimal range is 35–40 °C: warm but not hot.

The Scald + Opara Pair

The bread is built on the contrast of two prepared components:

If the opara is weak, the crumb will be sweet-flat. If the scald is poorly cooled or made from old malt, the acidity of the opara will overpower the sweetness.

Why Only 20% Wheat Flour

20% of wheat flour gives a minimal wheat scaffold and slightly lightens the crumb, but does not turn the bread into a 60/40 rye-wheat. It keeps the loaf firmly in rye territory: the scald and malt stay the dominant flavors, while the wheat only adds a little lift and a slightly more sliceable crumb. It also points the recipe toward Borodinsky, where wheat flour sits around 15–20% and works together with the scald and molasses.

Optional Coriander

4 g of ground coriander is a flavor note, not a profile. In Borodinsky, caraway and coriander together with molasses create the recognizable spiced character; here coriander is optional and caraway is left out entirely, so the scald-and-malt pairing stays in focus.

If you make it without coriander, that is a fair variation, not a mistake — it simply lets you taste the scald and malt on their own and decide whether coriander belongs in this particular profile.

If Something Is Off

  • Scald pale and not sweet → the water was below 85 °C or the steep was too short; use full boiling water and keep it wrapped in a thermos for 40–60 minutes.
  • Mix killed the starter → the scald went in above 50 °C; check it with a thermometer and wait for 35–40 °C before mixing.
  • Crumb too sweet and gummy → too much red malt; 3% of the flour is the norm here, so reduce it or switch part to white malt.
  • Dark crumb but no malt flavor → unfermented (raw) malt was used; this bread needs fermented red malt specifically.
  • Crust burns before the crumb is baked → the malt accelerates browning; lower the start to 240 °C and cover the top with foil.
  • Acidity overpowers the malt → the opara over-matured; shorten it to about 10 hours or reduce the active starter.
  • Scald streaks through the crumb → it was not dispersed; mix with the K-beater for 2–3 minutes to full uniform.

First-grade flour differs from the highest grade not in strength but in ash: GOST 26574-2017, table 2, allows up to 0.75% against 0.55% and whiteness of at least 36 against 54 units; the gluten requirement is actually higher — at least 30% against 28%. Artisan Superiore is a type 00 flour, so its ash matches the highest grade. A 5:1 blend gives a calculated ash of about 0.74% assuming a typical 1.7% for whole-grain wheat; the real spread is 0.71–0.79% depending on the batch, with the GOST ceiling for wholemeal at 2.0%. On strength Superiore is not the weaker option: its 13.5% protein works out to roughly 34% wet gluten against the 30% minimum (an estimate using the usual factor of 2.5, not a measurement). The difference from mill-made first-grade flour is the grind: the bran particles in a blend are coarser.

Instructions

  1. Prepare the starter

    Take the rye starter out of the fridge. Run 3 refreshments: 5+10+10 → 5+15+15 → 5+20+20; the final refreshment is small and should be used at peak.

  2. Make the scald

    100 g of rye flour and 15 g of red malt poured with 150 g of boiling water in a thermos or jar with a tight lid; steep 1 hour, then cool to 35–40 °C.

  3. Set aside the reserve and build the opara

    Before building the opara, set aside 15–20 g of active starter into a clean jar and put it in the fridge. Mix 100 g of rye flour, 100 g of water, and 20 g of active starter from the small final jar. Hold for 10–14 hours at 24–27 °C until domed with a lactic smell.

  4. Mix

    In the Kenwood stir the scald with 130 g of water — warm at 45–50 °C (dough about 27 °C, the plan is built around it) or at room temperature (dough about 23 °C, longer proof). Add the opara, 9 g of salt and 4 g of coriander, then 200 g of rye flour and 100 g of wheat flour. Mix with the K-beater on Min for 1–2 minutes to uniform.

  5. Transfer into the pan

    Grease the pan, transfer the dough, level with a wet spoon or wet fingers; mark the starting height and dough mass.

  6. Final proof

    Mark the starting height of the dough in the pan. Proof at room temperature, 22–23 °C, until a rise of 1.5–1.8 times with small cracks on the surface: 2–3 hours with warm mixing water, 3–4 hours with room-temperature water. Go by the rise, not by the timer.

  7. Bake

    250 °C 10 minutes with steam, 200 °C 30 minutes, 170 °C 30 minutes to the first probe check; if below 98 °C inside, top up in 5-minute increments.

  8. Rest

    Take out of the pan, cool on a rack uncovered, wrap in cotton/linen. Do not slice before 12 hours, better 24 hours.

    Scald

    In a thermos or a jar with a tight lid, combine 100 g of whole-grain rye flour and 15 g of red fermented rye malt. Pour in 150 g of boiling water, stir quickly with no dry lumps, close tightly, and hold for 1 hour. Then simply leave it overnight until the morning mix — no reheating needed: in a 22–23 °C kitchen the scald cools by morning (barely warm in a thermos, room temperature in a jar), and the warm mixing water compensates for that.

    Sourdough opara

    Before building the opara, set aside 15–20 g of mature starter into a clean jar and put it in the fridge — this is the reserve mother starter for future bakes. 20 g from the small active jar goes into the opara. Mix 100 g of whole-grain rye flour, 100 g of water, and 20 g of active starter from small refreshment 3. Cover and hold at room temperature until domed with a lactic smell; in a 22–23 °C kitchen that is closer to 13–14 hours — almost the whole overnight window.

  6. Day 3, 08:00–08:05

    Mix

    Into the Kenwood bowl put all of the scald (about 265 g) and 130 g of water, and stir. Choose the water temperature (see the table “Mixing water temperature” in the body of the recipe): warm water at 45–50 °C brings the dough to about 27 °C and keeps the proof within 2–3 hours — the plan is built around it; room-temperature water gives a dough of about 23 °C and a proof of 3–4 hours. Warm water goes in with the scald first — the mixture becomes barely warm and safe for the opara. Add all of the opara (about 220 g), 9 g of salt, and 4 g of coriander, stir to uniform, then add 200 g of whole-grain rye flour, 83 g of strong white bread flour and 17 g of whole-grain wheat flour. Mix with the K-beater on Min for 1–2 minutes to full uniform.

    Problem
    The formula called for first-grade wheat flour, which the author cannot buy: MukaMuka does not make one, so the “brand the author uses” note named a product that does not exist.
    Change
    The ingredient is split into what actually goes into the dough: 83 g of strong white bread flour (MukaMuka Artisan Superiore 13.5%, type 00) and 17 g of whole-grain wheat. The 5:1 ratio brings the ash up to the first-grade limit of GOST 26574-2017, table 2 — no more than 0.75% against 0.55% for the highest grade. Total flour, water, salt and every other ingredient are unchanged; only the baker's percentages of these two entries, the worksheet lines and the formula summary were recalculated.
    Result
    The recipe now lists flour that can actually be bought. A reader who has mill-made first-grade flour simply takes 100 g of it instead of this pair.
    Conclusion
    Not yet verified by baking: on calculated ash and strength the blend matches first-grade flour, but its bran particles are coarser than a mill grind. If the crumb turns out noticeably rougher, reduce the whole-grain share.

    Problem
    The first bake on v1.1 showed that the opara had been pulled early (10 hours instead of the 12–14 hour window), the top crust cracked and tore away from the crumb, and the taste was thin (4/10). The wording of the steps did not stop the baker from pulling the opara and the proof “by the clock”.
    Change
    The check and target of the opara and proof steps, and the short instructions, were strengthened: pull the opara by the dome and a rise of 1.8–2.5 times (not by a timer; 10 hours at 22–23 °C is early, the window is 12–14 hours), and lead the proof to 1.5–1.8 times plus small cracks, marking the starting height in the pan.
    Result
    First bake 08.07.2026: the crumb was fully baked (probe 98.1 °C), even, not gummy; the link between the sweetness of the scald and the acidity of the opara came through moderately; the taste was acceptable but thin and weakly aromatic — the author scored it 4/10. The top crust cracked and lifted off the crumb.
    Conclusion
    The 4/10 was scored on an early-pulled opara, so it is not a clean verdict on the formula. Next step: repeat with the opara taken to a full dome (12–14 hours) and a complete proof; only after a clean data point decide about strengthening the taste (20–25 g of malt, or a 2-hour scald per the research section).

Intermediate theoretical notes before the first bake.

    Problem
    The author's kitchen holds 22–23 °C, while the v1.0 plan assumed 24–28 °C and required reheating the cooled scald to 35–40 °C in a water bath.
    Change
    After its hour in the thermos the scald now stays overnight without reheating; its room temperature is compensated by the mixing water. The water is a choice: warm at 45–50 °C (dough about 27 °C, the plan is built around it — proof 2–3 hours), or room temperature (dough about 23 °C — proof 3–4 hours). The opara is led to a dome rather than to a fixed number of hours.
    Conclusion
    To be checked by the first bake: does the dough reach 26–29 °C with water at 45–50 °C, and does the opara ripen within the overnight window at 22–23 °C.

    Problem
    In the R1-C rye track, after R1-C3 (100% rye), a transition to a rye with a scald and malt is needed — without the sweetness of molasses/sugar and without the complexity of caraway, as a bridge to R2-C1 (Borodinsky).
    Change
    Created R1-C4: rye-wheat 80/20 with a scald (100 g rye + 150 g boiling water + 15 g red malt), a sourdough opara with 20% of the flour preferred, and optional coriander.
    Conclusion
    The lesson tests how the sweetness of the scald contrasts with the acidity of the opara and whether this gives a recognizable profile without adding molasses and sugar.
